Foodie Friday – from Lake Austin, Texas (Texas Hill Country)
My daughter Vanessa and I had the most wonderful time reconnecting after a long year apart. Deciding where to travel was based on minimal travel time, good weather and a quiet place to relax. By choosing Lake Austin Resort we had the extra bonus of the food!
Thanks to Executive Chef Stéphane Beaucamp, this is the first spa experience where we were looking forward to the meals before the treatments. Spa menus are usually geared to offer healthy dishes which can taste boring and unexciting. Not at Lake Austin – the menus beautifully describe the clean, tasteful dishes. As the menu items all sounded so delicious and hard to choose, Lake Austin recommended ordering more than one selection. Of course we did. And, of course, we enjoyed every mouthful. The dishes were simple yet packed with a combination of flavours that left our tastebuds in bliss.
The culinary experience was enhanced by the extraordinary herb garden. So many out of the ordinary herbs in the garden, e.g. watermelon, orange, grapefruit mint and pineapple sage to name a few. X-factor herbs like these helped turn the dishes into magic.
Chef Beaucamp is passionate about creating memorable meals that are fun, delicious, and healthy. Flavoursome guilt-free eating! What do you think about trying Grilled Nopales? This was our first time. Chef’s Nopales is served with grilled cactus, black bean puree, pico de gallo, red cabbage, sautéed mushroom and poblano, queso fresco – imaginative and tasty. Who knew – edible cacti (apart from the Javelinas!).
With a little help from the book, FRESH Healthy Cooking and Living from Lake Austin Spa Resort, I hope to create appetising dishes in our Desert Dream home. So far I’ve nailed one – Rainbow Trout and Shrimp Mousse on Endives. (I will be serving this to our first post pandemic guests this week!).
